Dark Vegetables Find Wary Consumers: Study

Few Ontarians eat enough dark green and yellow vegetables despite their nutritional benefits, according to a University of Guelph study.

Although nutritionists say these vegetables are good for health, the majority of Ontario, Canada consumers avoid them, the study found. As part of a multi-year study, Profs. Sunghwan Yi and Vinay Kanetkar, Marketing and Consumer Studies, and Paula Brauer, Family Relations and Applied Nutrition, looked at consumer differences in vegetable consumption.

The researchers asked about 750 main food preparers their perceptions of specific vegetables and what would lead them to eat more vegetables. The results were published in the journal Public Health Nutrition.
